Having trouble deciding on whether to bring chocolate chip cookies or brownies to your next party? Well let me introduce you to the Brownie-Cookie or as we like to call it...the Brookie!

Directions


Brownie Layer

1. Preheat oven to 350 degrees. Line a 9x9 baking pan with parchment paper and grease with baking spray.

2. In a medium bowl, whisk together flour, cocoa and salt. Set aside.

3. In a large bowl , whisk together the butter, oil and sugar until creamy.

4. Add egg and vanilla. Mix until well combined.

5. Slowly add the flour mixture to the wet mixture. Mix until just combined. Do not overmix.

6. Stir in the mini-chocolate chips.

7. Pour the batter into the pan and spread evenly.

8. In a medium bowl add the flour, cornstarch, baking powder, baking soda and salt. Whisk together until incorporated.

9. In a large bowl with a hand mixer or in a stand mixer…beat the butter, brown sugar, and sugar until well mixed.

10. Add eggs and vanilla and continue mixing until smooth.

11. Add the flour mixture to the wet mixture and beat until just combined.

12. Stir in the mini-chocolate chips.

13. Carefully scoop cookie dough on top of the brownie mixture. Gently spread the dough evenly with a spatula or your hands.

14. Bake for 30-35 minutes or until a toothpick inserted comes out clean.

15. Remove from oven and sprinkle a few chocolate chips on top of the baked brookies.

16. Allow the bars to cool completely before cutting. Let cool in refrigerator or freezer for best results.

17. Cut bars into pieces using a serrated knife. Store in an airtight container for up to a week.

  • 1/4 cup butter, slightly melted
  • 1/8 cup vegetable oil
  • 2/3 cups sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup flour
  • 1/4 cup cocoa
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
Cookie Layer

  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoons vanilla
  • 1 cup flour
  • 1 teaspoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

NOTES:

Feel free to reverse the brownie and cookie layers. I made the brownie on the bottom because I like my brownies a little crispy.
