Nothing tastes more like the holidays than a nice glass of eggnog...except maybe an eggnog cookie! These cakey cookies are topped with eggnog icing and full of holiday spices...with just a hint of rum. Great for holiday parties or to leave for Santa!

Eggnog Cookies

Nothing tastes more like the holidays than a nice glass of eggnog...except maybe these Eggnog Cookies! These cakey cookies are topped with a sweet eggnog glaze and are full of holiday spices...with just a hint of rum flavor. Great for holiday parties or to leave for Santa!

Ingredients

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon dark rum or rum extract (optional)
  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup eggnog
Sugar/Nutmeg Mixture
  • 1/4 cup sugar
  • 2 teaspoons nutmeg
Eggnog Glaze
  • 1 1/2 cups powdered sugar
  • 1-2 tablespoons eggnog

Notes

Using rum is optional for this recipe. Rum extract works good, but the cookies taste great without either!Also, the cookies taste great without the icing, too!

Directions

1. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.

2. In a large bowl or in the bowl of a stand mixer, beat the butter until smooth and creamy.

3. Add the sugar and brown sugar and beat together.

4. Add the eggs, vanilla and rum. Mix until incorporated.

5. Add half of the flour mixture and mix until combined.

6. Pour in the eggnog and mix until combined.

7. Add the remaining flour mixture and mix until just combined. Dough will be soft and sticky.

8. Cover and refrigerate for around an hour.

9. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper or silicone mats.

10. Mix sugar and nutmeg in a small bowl.

11. Scoop 1 1/2-inch globs (golf ball size) of dough and roll into balls.

12. Gently roll balls of dough in the sugar mixture and place on baking sheets a couple inches apart.

13. Bake for 11-12 minutes until lightly golden brown on the bottom. Do not overbake.

14. Remove from oven and let cool for completely on a wire rack before adding the glaze.

15. Make the glaze. In a medium bowl add the powdered sugar and eggnog.

16. Whisk together until smooth, but still thick.

17. With a fork or an icing bag, drizzle the glaze over the cookies. You can also make a design and use sprinkles if desired.

18. Let icing harden completely before storing.
