Lasagna Roll Ups

Lasagna made easier! These roll-ups are the best part of lasagna rolled up in a single serving...easy to dish out with just as much flavor.

Ingredients

  • 15 lasagna noodles, uncooked
  • 2 cups marinara sauce
Cheese Filling
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1 cup shredded Parmesan cheese
  • 1/4 cup fresh Italian parsley, chopped (plus extra for topping)
  • 3 cups shredded mozzarella cheese (plus extra for topping)
Ground Turkey Filling
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 yellow onion, diced
  • 1 pound ground turkey
  • 1 cup marinara sauce
  • 2 tablespoons Italian seasoning

Notes

Use ground beef or veggie crumble as a substitute for the turkey. You can also make this without the meat altogether.


Italian Seasoning

1 teaspoon marjoram, 1 teaspoon dried oregano, 1 teaspoon dried basil,

1/2 teaspoon dried rosemary, 1/2 teaspoon dried sage, 1/2 teaspoon thyme,

1/2 teaspoon red pepper flakes, 1/2 teaspoon garlic powder,

1/2 teaspoon salt, 1/2 teaspoon pepper

Directions

1. Preheat oven to 375 degrees and line 2 baking sheets with parchment paper.

2. In a large bowl, stir together the ricotta, egg, and Parmesan.

3. Add the mozzarella and parsley and mix until just combined. Cover and place in refrigerator until ready to use.

4. In an extra-large saucepan, bring 6 quarts of water to a boil. Add salt to water before cooking noodles.

5. Add lasagna noodles and cook for 8 minutes. Pasta should be al dente.

6. Strain the noodles and rinse with water. Set aside.

7. Heat olive oil in a large skillet over medium-high heat.

8. Add the onion and garlic to the skillet. Sauté for 2-3 minutes.

9. Add ground turkey and cook until browned. About 4-5 minutes.

10. Reduce heat to medium and add 1 cup of marinara sauce and the Italian seasoning. Stir and continue to cook for 1-2 minutes. Remove from heat and set aside.

11. Spray a 12” cast iron skillet or an 11x7 inch baking dish with cooking spray and then pour 1 cup of the marinara sauce on the bottom of the dish.

12. Lay lasagna noodles on the baking sheets.

13. Add a thin layer of the cheese mixture on each of the noodles leaving enough room at the end to seal.

14. Add a thin layer of the meat filling on top of the cheese filling.

15. Tightly roll the noodles using the clean part of the noodle to seal the roll to itself.

16. Place rolls in the skillet or baking dish.  Make sure they are all tightly packed so none unravel.

17. Top the rolls with 1 cup of marinara.  Spread evenly.

18. Sprinkle with remaining mozzarella cheese.

19. Bake for 22-25 minutes until the edges of the rolls start to crisp.

20. Remove from oven and garnish with extra parsley if desired. Serve while warm.
