Mini-Donut Muffins

These versatile treats are bite sized, easy to make and incredibly hard to resist! With the texture of a muffin and the taste of a donut...these cinnamon/sugar goodies are great for breakfast or for a midday treat!

1. Preheat the oven to 400 degrees and grease a 24-count mini-muffin tin with baking spray.

2. In medium bowl, add flour, baking powder, baking soda, salt, nutmeg and cinnamon. Whisk until incorporated. Set aside.

3. In a large bowl, add the butter, oil, sugar and brown sugar. Beat until smooth scraping down the sides when necessary.

4. Add eggs and vanilla. Mix on medium speed until light and fluffy.

5. Add a third of the flour mixture and mix until just combined.

6. Stir in the buttermilk.

7. Add another third of the flour and mix.

8. Stir in the milk. Add remaining flour and mix until all flour is combined.

9. Spoon or pipe mixture into the greased mini-muffin pan filling each cup half full.

10. Bake the muffins for 9 to 10 minutes, or until they are a light golden brown.

11. Remove from oven and let cool in pan for 5 minutes before releasing. While the muffins are cooling melt the butter and prepare cinnamon/sugar.

12. Once cool, dip the top of the muffin in the melted butter and sprinkle or roll in the cinnamon/sugar mixture until coated.

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 to 1 1/4 teaspoons ground nutmeg, to taste
  • 3/4 teaspoon salt
  • 1/4 cup butter (mostly melted)
  • 1/4 cup canola oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1/2 cup buttermilk
Topping
  • 1/4 cup butter, melted
  • 1/4 cup sugar
  • 2 teaspoons cinnamon
