ONE-POT HEALTHY JAMBALAYA

A healthy take on a classic Louisiana dish. It’s an easy one-pot meal that is so good! A delicious mix of brown rice, chicken and tons of veggies with just the right amount of that Creole spice!

Directions

1. Heat 1 tablespoon of oil in a Dutch oven (or a deep pan with a lid) over medium-high heat.

2. Add the chicken sausage and cook for 5 to 6 minutes until lightly browned. Set aside.

3. Lower heat to medium and add remaining olive oil, garlic, onion, celery and bell pepper. Sauté for 3-4 minutes.

4. Add the Cajun seasoning and cook for another minute.

5. Stir in the tomatoes and cook for another minute.

6. Add the rice and chicken broth.

7. Bring mixture to a boil.

8. Cover and reduce heat to medium-low. Let simmer for 45 minutes stirring every 10 minutes so the rice does not stick to the side.

9. Stir in the okra, shredded chicken and chicken sausage.

10. Cover and let simmer another 10-15 minutes, stirring every couple minutes, until the liquid has been absorbed.

11. Remove from heat and serve immediately. Garnish with green onion and hot sauce if desired.

ingredients:

  • 3 tablespoons olive oil
  • 1 lb Andouille chicken sausage (fully cooked)
  • 2 garlic cloves, minced
  • 1 yellow onion, chopped
  • 3 stalks celery, chopped
  • 1 green bell pepper, diced
  • 2 tablespoons Cajun seasoning 
  • 1 can diced fire roasted tomatoes (14oz)
  • 4 cups chicken broth
  • 1 1/4 cups short brown rice
  • 1 cup okra, sliced thin
  • 1 1/2 cups shredded rotisserie chicken
  • 4 green onions, chopped (optional)

  6. Add the rice and chicken broth.

NOTES:

You can substitute white rice for brown rice.  Just reduce the broth to 3 cups and lower simmer cook time by 10 minutes.
