Raspberry Oat Bars

It seems impossible for something so easy to taste so good! But these Raspberry Oat Bars definitely fall into that category! Enjoy as a breakfast treat or in the afternoon with a cup of tea. Either way...these oat bars will be gone before you know it!

Directions

1. Preheat oven to 350 degrees. Line an 8x8 baking dish with parchment paper and set aside.

2. In a large bowl stir together the flour, oats, sugar, brown sugar, cinnamon, nutmeg and salt.

3. Add the melted butter and vanilla. Mix together with a fork or a pastry cutter into a crumble-like mixture.

4. Set aside 1 1/2 cups of the crumble mixture, then press remaining crumble into the bottom of your baking dish. Bake for 10 minutes.

5. Remove from oven. Spread the raspberry jam over the crust and Sprinkle with remaining crumble.

6. Bake for another 30-35 minutes until crumb topping is lightly golden.

7. Let bars cool in pan completely before cutting. For best results cover and put in the freezer for 30 minutes before cutting.

  • 1 1/2 cups flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup butter, melted
  • 1 teaspoon vanilla
  • 1 cup raspberry preserves
