Rice Noodle Steak Salad

A light and tangy Thai inspired Summer salad with juicy marinated steak.

Directions

1. In a medium bowl add soy sauce, sesame oil, garlic, ginger and honey. Whisk together until combined.

2. Add steak and marinade to a gallon sized resealable bag. Remove as much air as possible and seal. Marinate for at least an hour up to overnight.

3. Grill, broil or pan fry steak around 3-4 minutes per side until cooked to your liking.

4. Set steak aside while preparing rest of salad

5. Add rice noodles to a pot of boiling water and cook 4-5 minutes until noodles are tender.

6. Drain the noodles and rinse immediately with cold water. Set aside.

7. In a small bowl add the lime juice, vinegar, soy sauce, honey, garlic, and sesame seeds. Mix until combined.

8. In a large serving bowl, toss the noodles, carrots, and cucumbers with the dressing.

9. Slice steak into thin strips and lay on top of salad.

10. Top with peanuts and green onions.

A light and tangy Thai inspired Summer salad with juicy marinated steak.

ingredients:

For the steak:
  • 12 oz thinly cut steak (skirt steak, New York strip)
  • 2 tablespoons low-sodium soy sauce
  • 3 teaspoons toasted sesame oil
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon ginger, minced
  • 2 teaspoons honey
For the salad:
  • 8 oz rice noodles
  • 1/2 cup lime juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon honey
  • 1/2 teaspoon garlic, minced
  • 1 tablespoon sesame seeds
  • 2 cups carrots, shredded
  • 3-4 mini cucumbers, thinly sliced without seeds 
  • 1/4 cup peanuts, chopped
  • 1/3 cup green onions, chopped
