Sheet Pan Gnocchi with Sausage and Tomatoes

So much flavor in this easy sheet pan recipe! Tender gnocchi, juicy tomatoes, and a light lemon sauce that brings it all together. A great summer dish!

1. Preheat your oven to 425 degrees and line a cooking sheet with parchment paper.

2. Remove sausage link casings and break into medium chunks. Arrange sausage evenly on the sheet.

3. In a large bowl, combine the gnocchi, tomatoes, broccolini, yellow squash, olive oil, garlic, capers, pepper and salt. Stir well to combine.

4. Pour the gnocchi mixture onto a baking sheet and spread into a single layer around the sausage chunks.

5. Bake for 30 minutes rotating the pan half way through and stirring occasionally.

6. Remove from the oven and put in gnocchi in a large serving bowl.

7. Add lemon juice and butter and stir with hot gnocchi and veggies.

8. Sprinkle with cheese and fresh basil.

ingredients:

  • 16oz gnocchi (shelf stable or frozen and thawed)
  • 16oz Italian turkey sausage, casings removed
  • 1/2 pound broccolini, trimmed and cut into 2” pieces
  • 1 yellow squash, cut in to 1” pieces
  • 1 pint cherry tomatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup capers
  • 2 tablespoons butter, melted
  • 1/4 cup pecorino romano cheese, shaved
  • 1/4 cup lemon juice
  • 1 handful fresh basil (chopped)
