Southwest Chicken Burgers with Avocado Salsa

A healthy and fun southwest dish packed with flavor! A great alternative to add to your grilling nights!

1. In a medium bowl add the avocados, corn, olive oil, lime juice, salt, black pepper, cayenne and cilantro.

2. Stir gently until all pieces are coated. Cover and set aside in refrigerator.

3. In a large bowl add the ground chicken, green chiles, mayo, cheese, onions and southwest seasoning. Mix until well combined.

4. Using a 1/2 cup scoop or your hands, create 6 firmly packed chicken burger patties.

5. Pre-heat your outdoor grill to 400 degrees.

6. Cook the patties around 6 minutes on each side or until the chicken reaches an internal temperature of 165 degrees.

Ingredients:

Chicken Burgers
  • 1 1/2 pounds ground chicken
  • 1 can diced green chiles (4oz)
  • 1/4 cup mayonnaise
  • 1 cup shredded cheese blend
  • 2 green onions, chopped
  • 2 tablespoons southwest seasoning
Avocado Corn Salsa
  • 2 large avocados, diced
  • 1 cup frozen corn, thawed
  • 2 tablespoons olive oil
  • 1/4 cup lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cayenne
  • 1/8 cup chopped fresh cilantro
Southwest Seasoning
  • 1 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Notes:

Substitute ground turkey for chicken if desired. I have found using fresh frozen corn works best, but you can substitute using canned corn or freshly cooked corn.
