Watermelon sorbet

Simple, delicious and refreshing.  A perfect summer time treat!


Directions

1.  Cut watermelon into small pieces and measure out 3 cups.

2.  Stir the sugar and water in a small saucepan until dissolved.

3.  Turn heat to medium stirring occasionally until sugar mixture is clear and starts to bubble on the side.

5.  In a blender add watermelon and simple syrup. Puree mixture. 

  

7.  Transfer sorbet into an airtight freezer container.

4. Remove from heat and add lemon juice. Set mixture aside to cool.

6.  Freeze in an ice-cream maker according to the manufacturer's instructions. 

  

Yield: 3 cups sorbet

  • 3 cups watermelon 
  • 1 cup sugar
  • 1/2 cup water
  • Juice of 1 lemon

instructions:

  1. Cut watermelon into small pieces and measure out 3 cups.
  2. Stir the sugar and water in a small saucepan until dissolved.  
  3. Turn heat to medium stirring occasionally until sugar mixture is clear and starts to bubble on the side.
  4. Remove from heat and add lemon juice.  Set mixture aside to cool.
  5. In a blender add watermelon and simple syrup.  Puree mixture.
  6. Freeze in an ice-cream maker according to the manufacturer's instructions.
  7. Transfer sorbet into an airtight freezer container.

NOTES:

You can use honey or other sweeteners that will dissolve in water.  

Add more lemon juice and less water to make the sorbet tart.

For firmer sorbet, leave in the freezer for about an hour before serving.

If sorbet is completely frozen, leave out on counter for 15 minutes before serving.
