Ingredients

  • 2 ¾ cups flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cardamon
  • 1/2 teaspoon ground allspice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1 cup apple cider
  • 3/4 cup unsweetened applesauce
  • 2/3 cup canola oil
Cinnamon/Sugar Topping
  • 2 tablespoons butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
Apple Cider Glaze
  • 1 1/2 cups powdered sugar
  • 3–4 teaspoons apple cider

Canola Oil: You can use vegetable oil or melted butter instead of canola oil if desired.

Directions

1. Preheat your oven to 350 degrees. Using baking spray, grease and flour a 10-inch Bundt pan, ensuring that all crevices are well coated.

2. In a bowl, whisk together the flour, cinnamon, ginger, cardamon, allspice, baking powder, baking soda, and salt. Set aside.

3. In a separate large mixing bowl, beat the eggs and vanilla extract together until well combined.

4. Add in the sugar and brown sugar.  Continue to beat until the mixture is creamy and smooth.

5. Add the apple cider, unsweetened applesauce, and canola oil to the egg mixture. Mix well.

6. Add half of the dry ingredient mixture to the wet ingredients.  Mix together.

7. Add remaining dry ingredients and mix until everything is just combined.  Be careful not to overmix, as this can result in a dense cake.

8. Pour the batter into the prepared Bundt pan, spreading it evenly.

9. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.

10. Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10 minutes.

11. Then, carefully invert the pan onto a wire rack to release the cake.

12. While cake is still warm, brush with melted butter and sprinkle generously with cinnamon sugar mixture. You might need to use your fingers or the pastry brush to rub the in the cinnamon/sugar.

13. Make the glaze by mixing the apple cider into the powdered sugar one teaspoon at a time at a time until you reach the perfect consistency. It should be pourable but not too thin.

14. Drizzle the glaze over the top of the Bundt cake.  Store leftovers in an airtight container at room temperature.  Cake will last a couple days.
