When you add the batter the temperature of the oil will decrease.  Make sure you bring the oil up to the right temperature before cooking the other fritters.

Directions

1. Make the glaze.  In a medium bowl, whisk together the powdered sugar, milk, and vanilla. 

2. Cover with plastic wrap and set aside.

3. In a Dutch oven or a heavy-lidded pot, begin to heat the canola oil over medium heat.

4. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.  Set aside.

5. In a medium bowl, whisk together the eggs, milk, apple cider, and vanilla.

6. Pour the wet mixture into the dry mixture and mix until just combined.

7. Fold in the diced apples.

8. Check the oil temperature with a digital or candy thermometer.  The oil temperature should be around 375 degrees. 

9. Use a 1/4 measuring cup and a spoon to carefully scrape batter into preheated oil, fitting about 4 at a time. 

10. Let cook for 2 minutes until the bottom is a deep golden brown. 

11. Flip the fritters with a slotted spoon and cook another 2 minutes.

12. Remove from hot oil and place on a paper towel lined baking sheet.

13. While still warm, take the cooked fritters, one at a time, and dip into the glaze on one side.

14. Turn the fritter over in the glaze to cover completely.

15. Set on a wire rack to drip dry until glaze hardens.

16. Repeat the steps for the remainder of the batter.  Be sure to check the oil temperature again before adding the remaining batter.
