Bakery Style Apple Bran Muffins

Big, bakery-style bran muffins packed with apples, applesauce, warm spices, and topped with buttery cinnamon-sugar. Perfect for breakfast or a cozy snack!

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup wheat bran or crushed All Bran Cereal
  • 1 cup buttermilk (or milk)
  • ¼ cup canola oil (or melted butter)
  • 1 large egg, beaten
  • ½ cup unsweetened applesauce
  • ½ cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup diced apple (about 1 1/2 medium apples)
  • ½ cup raisins
  • ½ cup raw pecans, coarsely chopped
Topping (optional)
  • 2 tablespoons melted butter
  • 3 tablespoons granulated sugar
  • ½ teaspoon cinnamon

Notes

To make 1 cup of buttermilk, combine 1 cup whole milk with 2 teaspoons lemon juice or vinegar and stir until combined. 


To adapt for a 12-count standard muffin tin:

Use a heaping ¼-cup scoop for each muffin cup, filling about ¾ full.

Bake at 400°F for 5 minutes, then reduce to 350°F and bake an additional 18–22 minutes (instead of 25–30)

Directions

1. Preheat the oven to 400°F. Line a 6-cup jumbo muffin pan with baking cups or grease with nonstick spray.

2. In a medium bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Set aside.

3. In a large bowl, combine the wheat bran and buttermilk and let stand for 10 minutes to soften.

4. Stir in the oil, egg, applesauce, brown sugar, and vanilla until uniform.

5. Gently fold in the dry mixture until just combined.

6. Fold in the diced apples, raisins, and pecans, being careful not to overmix.

7. Fill the muffin cups about three-quarters full, using a ½-cup scoop works well for this.

8. Bake at 400°F for 5 minutes, then reduce the heat to 350°F without opening the oven.

9. Continue baking 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

10. While still warm, brush the tops with melted butter and sprinkle with the cinnamon-sugar mixture.
