BBQ Chicken Lettuce Wraps

A great dinner or appetizer ready in under 30 minutes! Using rotisserie chicken, your favorite BBQ sauce and homemade coleslaw...you can transform your meal into something fun and low in carbs!


Directions

1. In a large bowl, add the cabbage, carrots, mayonnaise, vinegar, honey, paprika, salt and pepper.

2. Stir together until all pieces are coated and well combined. Place in refrigerator until ready to serve.

3. In a large skillet, heat olive oil over medium heat.

4. Add the red onion and sauté for 4-5 minutes until soft.

5. Add the garlic and sauté for around a minute until fragrant.

6. Add the chicken and BBQ sauce to the skillet.

7. Cook for another 3-4 minutes over medium heat until mixture comes to a slow boil.

8. Remove from heat and place in a serving bowl/plate next to the lettuce and coleslaw. Construct your lettuce wraps. Enjoy!

Ingredients:

  • 6 romaine lettuce leaves
  • 1 tablespoon olive oil
  • 1/2 cup red onion, diced
  • 2 garlic cloves, minced
  • 1 rotisserie chicken, shredded
  • 3/4 cup BBQ sauce
Coleslaw
  • 2 cups purple or green cabbage, shredded
  • 2 cups carrots, shredded
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey
  • 1 1/2 teaspoons apple cider vinegar
  • 2 tablespoons lime juice
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
