Directions

1. In a large soup pot or Dutch oven, warm olive oil and melt butter over medium-high heat.

2. Add the onion, carrots, and celery.  

3. Sauté for 6-7 minutes until veggies are tender.

4. Add garlic and cook for another minute until fragrant.

5. Stir in the flour, ranch seasoning, black pepper, and red pepper flakes.

6. Add the chicken broth and Frank’s Red-Hot sauce.

7. Bring soup to a boil over medium-high heat.

8. Reduce heat to medium-low, cover and let simmer for 15 minutes.

9. Add the cream cheese and stir until it has melted and is incorporated in the soup.

10. Stir in the chicken and bring back to a low boil over medium heat.

 

11. Remove from heat and garnish green onion and blue cheese crumbles if desired.
