Ingredients

  • 4 cups twisty pretzels
  • 3/4 cup butter
  • 1 cup sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla
Topping
  • 2 Tablespoons almond flour
  • 2 tablespoons sugar
  • 1 teaspoon salt

1. Heat oven to 250°F and cover a baking sheet with aluminum foil and place a cooling rack on top. Spray with baking spray and set aside.

2. Transfer pretzels to a large mixing bowl.

3. Melt the butter in a heavy-lidded saucepan over medium heat.

4. Reduce heat to medium-low and mix in the sugar, corn syrup and salt being careful not to touch the sides of the pan.

5. Increase the heat to medium and bring the mixture to a boil.

6. Once boiling, reduce heat to medium low and cover the saucepan for 1 minute.

7. Uncover and boil for an additional 3-4 minutes until the mixture turns golden brown or until the mixture registers 300 degrees on a candy thermometer. Do not stir.

8. Remove from heat and stir in the baking soda, cream of tartar and vanilla. Mixture will bubble violently.

9. Pour the toffee mixture over the pretzels. Stir gently until all pieces are coated.

10. Remove the pretzels from the bowl and place them on the cooling rack. Lay them side by side without touching. Use a toothpick, chopsticks or a fork to separate.

11. Bake for 30 minutes.

12. Remove from oven and let cool for 10 minutes before adding topping.

13. In a small bowl stir together the almond flour, sugar and salt.

14. Place pretzels in a large bowl and add the topping. Gently mix together until all pretzels are coated.
