Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoons baking soda
  • 1 teaspoons salt
  • 2 large eggs
  • 2 cups buttermilk
  • 6 tablespoons butter, melted, cooled to room temperature
  • 2 teaspoons vanilla extract
  • non-stick cooking spray
  • fresh berries and cream for serving

1. In a medium-sized bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Set aside.

2. In a separate bowl, lightly beat eggs. Whisk in buttermilk, melted butter, and vanilla, until combined.

3. Stir wet ingredients into dry ingredients until just combined. Do not overmix. Batter should have a few small lumps remaining.

4. Let batter rest for 5 minutes. Preheat waffle maker per manufacturer’s instructions.

5. Spray waffle maker with non-stick cooking spray as needed. Add approx. 1/3-1/2 cup to preheated waffle maker.

6. Cook waffles according to manufacturer’s instructions, approximately 2-3 minutes. Serve with fresh berries and cream or maple syrup.
