Cajun Turkey and Sausage Foil Pack

Whether you are camping or just trying to find a fun way to feed your family at home, these foil packs are an easy way to prep for dinner! Cajun spices cook into the meat and veggies making this delicious dinner one of our family favorites!

Ingredients

  • 16 ounces ground turkey, broken into small pieces
  • 12-14 ounces smoked turkey sausage, cut into rounds
  • 1 red onion, roughly chopped
  • 1 green bell pepper, roughly chopped
  • 1 1/2 cups baby red potatoes, quartered (about 1/2 pound)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
Cajun Seasoning:
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon white pepper

Notes

Make these foil packs ahead of time. Store in the refrigerator for a few days tightly sealed in a storage container. Use a variety of veggies to make your own custom foil packs!Substitute turkey for ground beef or veggie beef... and turkey sausage for pork sausage or veggie sausage.You can make this on a grill or over a campfire. On a grill cook as instructed over 400 degree heat. For a campfire do not place meal directly into flame. Use a grate or another pan to cook and open foil packs to check if done.

1. Pre-Heat oven to 400 degrees and prepare 6 -1’x1’ squares of heavy-duty aluminum foil.

2. In a large bowl, add the ground turkey, sausage, potatoes, onion and bell pepper.

3. Add olive oil, garlic and Cajun seasoning. Stir until all pieces are coated.

4. Divide the mixture evenly between the sheets of foil placing the mixture in the center of each piece.

5. Wrap the foil around the mixture tightly.

6. Place the foil packs on a sheet pan and cook in the oven for 40 minutes flipping once hallway through.

7. Remove from oven and carefully peel back the foil letting steam escape.

8. Garnish with fresh parsley if desired. Serve warm.
