1. Make the spice mix.  In a small bowl, add the paprika, turmeric, coriander, mustard, ginger, cumin, black pepper, white pepper and cayenne. Stir to combine.

2. Cut chicken into 2” pieces. Place chicken pieces in a medium bowl.

3. Add soy sauce, olive oil, brown sugar, lime juice, garlic and spice mix to the chicken. Stir together until combined and all pieces of chicken are soaking in marinade.

4. Cover and place in refrigerator for at least 2 hours.

5. Make the peanut sauce. In a medium bowl, add coconut milk, peanut butter, brown sugar, soy sauce, lime juice and red curry paste. Whisk until combined. Cover and refrigerate.

6. Make the veggie skewers. Cut red onion and bell peppers into 2” pieces. Place the pieces in a medium bowl.

7. Add the olive oil, salt and pepper to the veggies and stir until all pieces are coated. Set aside.

8. When chicken is finished marinating preheat your grill to 400 degrees and add chicken pieces to 2-3 skewers. Use remaining marinade to brush on veggies and chicken while grilling.

9. Add veggies to 2 skewers alternating between onion and bell pepper pieces.

10. Place the skewers on the grill and cook for about 12-15 minutes. Rotating every few minutes so all sides are cooked evenly. Brush remaining marinade on skewers while cooking.

11. Warm the peanut sauce in the microwave or in a small sauce pan and serve in a bowl with the skewers.

12. Sprinkle with green onion and peanuts if desired.
