Notes

You can substitute vanilla for the maple extract.

You can also substitute vegetable or olive oil for the coconut oil, but coconut oil produces the best flavor in my opinion.

Directions

1. Preheat oven to 300 degrees and line a rimmed baking sheet with parchment paper.

2. In a large bowl, add the oats, nuts, and seeds.  Stir together.

3. In a medium bowl, add the maple syrup, coconut oil and maple extract.

4. Whisk together.  (Heat in microwave for 30 seconds if coconut oil is in solid state.)

5. Pour maple syrup mixture over oat mixture.

6. Stir to coat evenly.

7. Spread granola evenly onto the prepared baking sheet.  Sprinkle salt over the top.

8. Using a piece of parchment paper, press down with fingertips until it is one solid even layer.

9. Bake for 40-45 minutes until granola is golden brown.

10. Remove from oven and let cool completely.

 

11. Break into chunks and store in an air-tight container.
