Coconut Rice

A sweet rice, perfectly paired with Thai and other Asian inspired dishes!

1. In a rice cooker, add the rice, coconut milk, pineapple juice, water, salt and toasted coconut.

2. Cook according to rice cooker around 20 minutes.

3. When rice is done, toss the rice.

ingredients:

  • 2 cups long grain rice
  • 1 can low-fat coconut milk
  • 1 cup pineapple juice
  • 1 cup water
  • 1/2 teaspoon salt
  • 1⁄3 cup toasted coconut
  • 1/8 cup fresh cilantro, packed

instructions:

How to cook Coconut Rice

  1. In a rice cooker, add the rice, coconut milk, pineapple juice, water, salt and toasted coconut.
  2. Cook according to rice cooker around 20 minutes.
  3. When rice is done, toss the rice.
  4. Top with cilantro.

NOTES:

If using a lidded saucepan instead of a rice cooker, follow directions for cooking time on rice bag.
