Ingredients

  • 2 3/4 cups flour
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 1/2 cup molasses, unsulfured
  • 1 egg
  • 1 teaspoon vanilla

1. In a medium bowl, whisk the flour, ginger, cinnamon, nutmeg, cloves, white pepper, baking powder, baking soda, and salt. Set it aside.

2. In a large bowl or using a stand mixer, beat the butter until it becomes smooth and creamy.

3. Add the sugar to the butter and beat them together until they are well combined.

4. Now, add the molasses, egg, and vanilla to the mixture. Beat everything together until it becomes light and fluffy.

5. Gradually add the flour mixture to the wet ingredients and mix until everything is just combined.

6. Take the dough and spoon it out onto a sheet of plastic wrap. Shape it into a thin disk and cover it. Let it chill in the refrigerator for at least 3 hours before rolling it out.

7. Preheat your oven to 375 degrees. Line two baking sheets with parchment paper.

8. On a floured surface, roll out the chilled dough to about 1/4-inch thickness.

9. Use cookie cutters to cut out shapes from the gingerbread dough. Place the shapes onto the prepared baking sheets. Depending on the size of your cookies, you should get around 24.

10. Bake the cookies for about 8-10 minutes until the edges turn brown.

11. Once baked, remove the cookies from the oven and let them cool completely on a wire rack.

12. You can now decorate the cookies with royal icing or a glaze.
