Gluten Free Gingerbread Waffles

Gingerbread and holiday just go together! Whether you are eating gluten-free or not...these fun and festive waffles are perfect way to celebrate the holidays with breakfast!


Directions

1. Gather ingredients. Preheat waffle maker per manufacturer’s instructions.

2. In a large bowl, combine rice flour, potato starch, tapioca flour, xanthan gum, baking powder, baking soda, sugar, salt, ginger, nutmeg, and cloves.

3. Whisk to fully combine. Set aside.

4. In a separate bowl, beat eggs.

5. Whisk in milk, sour cream, coconut oil, and molasses, until well combined.

6. Combine wet ingredients to dry ingredients. Gently mix until they are just combined and mostly smooth. Do not overmix.

7. Spray waffle maker with non-stick cooking spray as needed. Add approx. 1/3 -1/2 cup of batter (varies, refer to manufacturer’s instructions) to preheated waffle maker.

8. Cook waffles according to manufacturer’s instructions, approximately 2-3 minutes. Sprinkle with powdered sugar and serve with whipped cream or maple syrup.

  • 1/4 teaspoon xanthan gum
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 large eggs
  • 3/4 cup whole milk
  • 1/2 cup sour cream
  • 3 tablespoons coconut oil, melted and cooled
  • 3 tablespoons molasses
  • Powdered sugar and whipped cream or maple syrup for serving
