Honey Dijon Roasted Carrots

A sweet and savory side that will turn your roasted carrots into an experience! This easy side dish is full of flavor and guaranteed to wake up those tired taste buds!

Preheat oven to 400 degrees and line a baking sheet with parchment paper or foil.

Peel the carrots and cut them into 6-inch thin pieces so that carrots are of uniform.

Place them in a large bowl and set aside.

In a medium bowl, whisk together olive oil, honey, Dijon mustard, minced garlic and lemon juice.

Pour 2/3 of the mixture over carrots and stir coating evenly. Reserve the other 1/3 for later.

Arrange the carrots in a single layer on the baking sheet and sprinkle salt and pepper on top.

Roast the carrots in the oven for 40-50 minutes. Turn them every 10 minutes until they begin to crisp black along the tips.

Remove from oven and transfer to a serving dish.

Drizzle remaining honey-mustard mixture over the top and sprinkle with green onions and almonds.

  • 2 pounds multi-colored or orange carrots
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 green onions, chopped
  • 2 tablespoons sliced almonds
