Directions

1. In a medium bowl, whisk together the flour, cornstarch, and salt.

2. In a large bowl or the bowl of a stand mixer, add the butter and powdered sugar.

3. Beat until smooth and creamy.

4. Add the egg yolk and lemon zest. 

5. Beat until well combined.

6. Add the dry ingredients to the wet ingredients.

7. Mix until just combined scraping down the sides when necessary.

8. Cover the dough and chill in refrigerator for at least 30 minutes.

9. Preheat oven to 350 degrees and line a baking sheet with parchment paper.

10. Scoop 1 ½ tablespoon sized dough balls onto the prepared baking sheet.

11. Using either the palm of your hand or the bottom of a glass, gently press down on the tops to make a flat circle.

12. Bake for 8-10 minutes until golden brown on the edges.

13. Remove from oven and let cool completely on a wire rack.

14. Make the glaze.  In a medium bowl, add the powdered sugar and lemon juice.

15. Whisk until combined.  If too thin add more powdered sugar.

16. Using a spoon, place a small amount of the glaze on the cookie and carefully spread.

17. Garnish with lemon zest if desired. 

18. Let cookies sit for 1-2 hours to let the glaze harden before storing.
