Light and Creamy Cajun Chicken Pasta

This delicious Cajun spiced meal is ready in around 30 minutes! A lighter take on this popular pasta dish, but packed with just as much flavor. A great weeknight meal that everyone will love!

Ingredients

  • 12 oz short-cut pasta (Fusilli, Farfalle, Penne, etc.)
  • 2 tablespoons olive oil, divided
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium yellow bell pepper, sliced into strips, about 2-inches long
  • 1 tablespoon minced garlic
  • 2 tablespoons Cajun seasoning (I used Tony’s)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 (14.5 oz) can fire roasted diced tomatoes
  • 1 1/2 cups chicken broth
  • 1 cup milk
  • 1 rotisserie chicken, shredded (around 3 ½ cups)
  • 2 ounces cream cheese
  • 1/2 cup parmesan cheese, shredded or grated
  • 2 tablespoons fresh basil, chopped

1/2 teaspoon cayenne pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon dried thyme

1/4 teaspoon white pepper

Directions

1. Bring a large pot of water to boil.  Salt water to preference.

2. Cook pasta according to package directions to make al dente pasta.  Do not overcook.

3. Drain pasta and stir in ½ tablespoon olive oil to avoid pasta sticking together.  Cover and set aside.

4. In a large soup pot or a Dutch oven, heat remaining olive oil over medium-high heat.

5. Add the onion and bell peppers. 

6. Sauté for 7-8 minutes until veggies are soft.

7. Add garlic and sauté for another minute until fragrant.

8. Sprinkle in the Cajun seasoning, salt, and pepper.   Stir together.

9. Reduce heat to medium and add the tomatoes, chicken broth, and milk. 

10. Bring mixture to a slow boil and let simmer for about 5 minutes.

11. Add the chicken, cream cheese, and parmesan. 

12. Stir together until cheeses have melted and are combined. 

13. Remove from heat and add the pasta.  Stir together until all pieces are well coated.

14. Sprinkle on fresh basil and serve warm.
