1. Grease a mini-muffin tin with baking spray and preheat oven to 350 degrees.

2. In a medium bowl, whisk together flours, salt and baking soda. Set aside.

3. In a large bowl, beat the butter until creamy.

4. Add the brown sugar and honey and continue mixing until combined.

5. Add the flour mixture and mix until just combined.  Mixture will be crumbly.

6. Add the milk and mix until dough holds together.

7. Spoon out a tablespoon of dough and place in each muffin cup.

8. Press down each cup of dough using your fingers or a shot glass until packed tightly.

9. Bake for 10 minutes.

10. Let cool for 5 minutes in muffin tin.  Then run a sharp knife around the edges of the cup to release the cookies.

11. Release the cookies by flipping the muffin tin or gently with a knife.  Place on wire rack and place a piece of parchment underneath.

12. Fill a medium saucepan halfway with water and place a medium glass bowl on top to create a double boiler.  Heat water to a slow boil over medium heat.

13. Add marshmallows and corn syrup to bowl and stir together until completely melted. This should take around 5 minutes.

14. Remove from heat and allow to cool for 5-10 minutes before filling a large icing bag with the fluff.

15. Top each of the graham cookies with a dollop of marshmallow fluff. Let marshmallow set for 5 minutes.

16. Add chocolate chips and canola oil to a medium microwave safe bowl. Heat in microwave on half-power for 1 minute. Then heat on half-power in 15 second intervals stirring in between until chocolate is smooth.

17. Use a spoon to coat the top of the marshmallow and graham cookie with chocolate until covered.

18. Let cool completely in refrigerator until chocolate hardens.
