Matcha Mint White Chocolate Cookies

Directions

1. In a medium bowl, whisk together flour, matcha powder and salt. Set aside.

2. In a large bowl or in the bowl of a stand mixer, beat butter until creamy.

3. Add sugar and mix until combined.

4. Add egg, vanilla, and peppermint extract. Mix for another minute or until well blended.

5. Add flour mixture to the wet mixture and mix on low until incorporated.

6. Turn out dough onto a piece of wax or parchment paper and form a large disc.

7. Cover with wrap and refrigerate for 1 hour before rolling out.

8. Preheat oven to 350 degrees and line cookie sheet with parchment paper.

9. Roll out disc of dough on a floured surface. Knead the dough with your hands and press together flat before using rolling pin. Roll dough to 1/4” thick.

10. Using a 2 1/2-inch round cutter, cut out cookies.

11. Bake for 10-12 minutes or until slightly brown on the edges.

12. Remove from oven and let cool for 5 minutes before decorating.

13. In a medium microwave safe bowl, add the white chocolate chips and oil.

14. Heat in the microwave on half-power. Start with 1 minute and stir then 15 second intervals stirring in between until white chocolate is smooth. Stir in the peppermint extract.

15. Use a spoon or icing bottle to drizzle the white chocolate over the cookies.

16. Decorate with sprinkles if desired.
