Molasses Cookies

These chewy, soft cookies will remind you of home. Crisp on the outside, spiced with deep, cold weather flavors, but not too sweet! Enjoy these cookies with a cup of tea by the fire or anytime when you need a little comfort.

1. Gather ingredients. Preheat oven to 350 degrees. Line bottom of a cookie sheet with parchment paper.

2. In a medium-sized bowl, combine flour, baking soda, cinnamon, cloves, ginger, allspice, and salt.

3. Whisk dry ingredients together. Set aside.

4. In a large bowl, cream together butter, shortening, white sugar, and brown sugar until light and fluffy.

5. Add egg, molasses, and corn syrup. Beat until fully combined.

6. Add dry ingredients to wet ingredients.

7. Mix to fully incorporate all ingredients. Dough will be slightly tacky.

8. Place coarse sugar in small, shallow bowl. Using a cookie scoop, scoop dough and gently form 1 1/2” - 2” size balls. Roll dough balls in coarse sugar.

9. Place on parchment-lined cookie sheet about 2” - 3” apart.

10. Bake at 350 degrees for approximately 9-11 minutes until edges are just golden brown, rotating cookie sheet halfway thru cooking time.

11. Remove from oven. Allow cookies to cool on cookie sheet for 1-2 minutes before transferring to wire rack to cool completely.

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup shortening, room temperature
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 1 tablespoon corn syrup
  • coarse decorating sugar for coating

NOTES:

Hands may be greased with cooking spray to reduce stickiness of dough when making dough balls. Dough can be made ahead of time and refrigerated 3 hours to overnight prior to forming and baking. Store cookies in airtight container at room temperature for up to 3 days. Red or Green coarse decorating sugar can be used for rolling for the holidays!
