Monterey Chicken Roll Ups

Monterey Chicken made easy, delicious and fun! Spicy pepper jack cheese, smokey bacon and sweet barbecue sauce give this dish fantastic flavor! In 30 minutes you will have a fancy and tasty dish that is sure to impress!


Directions

1. Preheat oven to 450 degrees and grease an 8x8 glass dish with cooking spray.

2. Pat dry chicken breasts. Season with salt, pepper on both sides of the chicken breast.

3. Add 1 tablespoon of barbeque sauce on all of the 4 breasts.

4. Cut two of the cheese slices in half. Place the four halves on top of the barbeque sauce.

5. Layer with bacon pieces on each breast.

6. Sprinkle half of the red and green bell pepper pieces on top. It’s okay if some fall to the side.

7. Carefully roll up the chicken breasts and use 1-2 toothpicks to secure.

8. Heat olive oil in a medium skillet over medium-high heat.

9. Brown chicken breasts 1 minute on each side.

10. Place browned chicken rolls in the glass baking dish.

11. Mix together remaining barbecue sauce and broth.

12. Pour into baking dish on and around the chicken roll ups. Add leftover bell peppers to the dish.

13. Bake chicken for 10 minutes.

14. Halve the remaining slices of cheese and place on top of chicken roll ups.

15 Bake for another 5-7 minutes.

16. Remove from oven and let rest for 5 minutes.

Cut into slices or serve whole in dish. Spoon remaining sauce on chicken and garnish with green onion.

Ingredients

  • 4 thinly sliced chicken breasts (about 1 pound)
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 3/4 cup barbecue sauce
  • 4 slices pepper jack cheese
  • 4 slices bacon, cooked and crumbled
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 2 green onions, chopped

Notes

You can also use two regular sized breasts and cut them in half.To make it easy I used pre-cooked bacon and heated it in the skillet for 2-3 minutes on high until crispy.
