Ingredients

  • 6 cups cubed bread (French bread or whole wheat)
  • 1 tablespoons butter, softened
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups diced ham, cooked
  • 8 eggs
  • 2 cups milk
  • 1 can green chiles
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dry mustard

Directions

1. Cut your bread into 1” x 1” cubes.  If using fresh bread, bake in the oven at 250 degrees for 10 minutes to dry out. 

2. Grease a 9x13 inch baking dish with butter.

3. In a large skillet, heat olive oil over medium heat.

4. Add the onion, green bell pepper, and red bell pepper. 

5. Sauté for 6-7 minutes until vegetables are softened. 

6. Layer the dish with the cubed bread, half of the ham, half of the onion mixture, and half of the cheese.

7.  In a large bowl, add the eggs and whisk together.

8. Add milk, green chiles, salt, black pepper, and dry mustard.  Whisk together.

9. Pour egg mixture over the bread mixture in the baking dish.

10. Layer the top with remaining ham, onion mixture, and cheese.

11. Cover the baking dish with plastic wrap and refrigerate overnight.

12. In the morning, preheat oven to 350°F and remove plastic wrap from the baking dish.

13. Bake for 40-45 minutes, until the casserole is golden brown on top and the eggs are set.

14. Let the casserole cool for a few minutes before serving. Enjoy!
