Ingredients

Blondies
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup butter, melted and cooled
  • 2 cups brown sugar
  • 2 large eggs, room temp
  • 2 teaspoons vanilla extract
  • 2/3 cup semi-sweet chocolate chips, plus more for topping
Peanut Butter Filling
  • 1 cup creamy peanut butter
  • 1/4 cup powdered sugar

I find it easiest to layer the parchment paper in two pieces and secure with small metal office binder clips.

You can also let the bars cool completely and store the bars in the refrigerator until ready to enjoy. Just reheat for 15-20 seconds for a gooey, delicious treat!

Directions

1. Line a 9x9 baking pan with parchment paper.

2. Make the peanut butter layer. In a medium microwave-safe bowl stir together the peanut butter and powdered sugar.

3. Heat in the microwave on high heat for 30 seconds until peanut butter is melted and pourable.

4. Pour the peanut butter mixture over the parchment and smooth into an even layer.

5. Place in the freezer for 1 hour to solidify.

6. Remove the peanut butter layer with the parchment paper from the pan, but keep it in the freezer while making the blondie batter.

7. Preheat oven to 350 degrees and line the same baking pan with parchment paper again.

8. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

9. In a large mixing bowl, whisk together the melted butter and brown sugar until combined.

10. Add the eggs and vanilla. Whisk until the mixture is smooth.

11. Add the dry mixture into the wet mixture.

12. Stir until everything is well combined.

13. Fold in the chocolate chips until they're evenly distributed throughout the batter.

14. Pour half of the blondie batter into the prepared baking pan, spreading it out into an even layer.

15. Get the peanut butter layer from the freezer and peel off the parchment paper. Layer the filling over the blondie batter.

16. Pour the remaining blondie batter over the peanut butter, spreading it out to cover the filling completely.

17. Bake the blondies for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.

18. Remove the baking pan from the oven add extra chocolate chips to the top if desired.

19. Let the blondies cool for 10 minutes.

20. Cut the blondies into squares and serve while still warm.
