Use a little cornstarch on the tablespoon or your thumb to keep dough from sticking when making wells.

Directions

1. In a medium bowl, whisk together flour, cinnamon, baking powder, and salt. Set aside.

2. Add butter and brown sugar to a large bowl and beat until creamy.

3. Add egg and vanilla and beat for another minute until well combined.

4. Add the flour mixture to the wet mixture.

5. Mix on low until all the flour is incorporated scraping the sides when necessary.

6. Cover and place dough in refrigerator and chill for 30 minutes.  Make the filling.

7. In a medium bowl, add pecans, cream, brown sugar, maple syrup, and almond extract.

8. Stir together until combined.

9. Preheat oven to 350 degrees and line cookie sheets with parchment paper.

10. Scoop a 1 ½ tablespoon amount of dough using a cookie scoop or a spoon.

11. Roll into a ball and place on the prepared baking sheet 2 inches apart from one another.  About 8 per cookie sheet.

12. Using the back of a tablespoon or your thumb, make a well in the center of the dough balls.

13. Fill each cookie well with 1 tablespoon of the pecan pie filling.

14. Bake cookies for 11-12 minutes until the edges of the cookie are golden brown.  Some of the mixture might spill out over the edge.

 

15. Remove from oven and let cool completely. Enjoy!
