1. Mix flour, cocoa, baking powder and salt together in a medium bowl. Set aside.

2. In a large bowl or in the bowl of a stand mixer, beat together the eggs, sugars, vanilla, peppermint extract and milk.

3. In a medium microwave safe bowl, add the butter and chocolate chips.

4. Heat chocolate and butter in the microwave on half power. Start with 1 minute and stir. Then cook in 15 second intervals stirring, in between, until chocolate is melted and smooth.

5. Add the chocolate mixture to the egg mixture. Mix until combined.

6. Slowly add the flour mixture to the wet mixture. Beat until just combined scraping down the sides when necessary.

7. Cover bowl and chill for a half hour.

8. Preheat the oven to 350 degrees and line two baking sheets with parchment paper or silicone mats.

9. Scoop 1-inch globs (golf ball size) of dough on lined baking sheets.

10. Bake for 8 minutes. Cookies will be slightly under-baked.

11. Remove from oven and press marshmallow halves cut side down on top of each.

12. Bake for 2 minutes longer.

13. Remove from oven and let cool completely on a wire rack.

 

Icing

1. Sift together the powdered sugar and cocoa.

2. In a medium saucepan heat the butter and cream over medium heat until butter is completely melted and mixture begins to simmer.

3. Remove from heat and whisk in the powdered sugar and cocoa.

4. Stir in the peppermint extract and immediately start icing cookies.

1. Drizzle the icing over the cookies using a spoon or a piping bag.

2. Add the crushed peppermint candies and let icing harden before serving or storing.
