Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cups brown sugar, packed
  • 1/2 cup sugar
  • 1 egg
  • 1 cup pumpkin puree
  • 1 teaspoons vanilla
  • 1 ½ cups quick cook oats
  • 1 1/2 cups semi-sweet chocolate chips, divided

Directions

1. In a medium bowl combine flour, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.

2. In a large bowl or the bowl of a stand mixer, beat the butter until creamy.

3. Add brown sugar and sugar.  Mix until combined.

4. Add egg, pumpkin puree, and vanilla. Mix until well incorporated.

5. Add the flour mixture to the wet mixture.

6. Mix until just combined.

7. Fold in the oats and 1 cup chocolate chips with a wooden spoon or spatula.  *The other ½ cup of chocolate chips you can use at the end for topping.

8. Preheat oven to 350 degrees and line your baking sheets with parchment paper.

9. Drop 2 tablespoon sized balls of dough on a parchment lined baking sheet a couple inches apart.

10. Bake for 12-14 minutes until cookies are golden brown on the edges and look set.

11. Remove cookies from oven and top with extra chocolate chips if desired. 

12. Let cool on a wire rack.
