Directions

1. In a medium bowl, whisk together flour, pumpkin pie spice, cream of tartar, baking soda, and salt.  Set aside.

2. In a large bowl or the bowl of a stand mixer, add the butter and the sugars. 

3. Beat together until combined.

4. Add the egg yolk and pumpkin puree.

5. Mix until well combined.

6. Add the flour mixture and mix until just combined.

7. Cover and refrigerate for about an hour.

8. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper.  

9. Mix sugar, cinnamon, and pumpkin pie spice in a small bowl.

10. Scoop 1 1/2-inch globs (golf ball size) of dough and roll into balls.

11. Gently roll balls of dough in the sugar mixture and place on baking sheets a couple inches apart.

12. Bake for 11-12 minutes until lightly golden brown on the bottom.  Do not overbake. 

 

13. Remove from oven and let cool for 10 minutes.  Enjoy!
