Rotisserie Chicken Tacos

Ingredients

  • 1 tablespoon olive oil
  • 2 green onions, diced
  • 1 rotisserie chicken, shredded (around 3 cups)
  • 2 tablespoons southwest seasoning
  • 2 tablespoons tomato paste
  • 1 can diced green chiles
  • 1 cup chicken broth
  • 2 tablespoons fresh cilantro, minced
  • 1 lime, juiced
  • 12 small flour or corn tortillas
Southwest Seasoning (2 TBSP)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

To toast a tortilla for tacos, simply heat it in a dry skillet over medium heat for a few seconds on each side until it becomes slightly golden and crispy.

Directions

1. In a large skillet, heat the olive oil over medium-high heat.

2. Add the green onion and sauté 2-3 minutes until soft.

3. Add the chicken, southwest seasoning, tomato paste, green chiles, and chicken broth.

4. Stir together and bring to a low boil. Simmer for 4-5 minutes over medium-low heat until most of the liquid has evaporated. 

5. Remove from heat and stir in the cilantro and lime juice. 

6. Heat the tortillas and build your chicken tacos using your favorite toppings.
