Sheet Pan Chicken Sausage and Peppers

An easy sheet pan recipe with a Cajun flare. Loaded with sweet peppers, potatoes, carrots and tender chicken sausage...this meal will quickly become a family favorite!

1. Pre-heat oven to 400 degrees and prepare a large baking sheet with parchment paper. Spray the pan lightly with cooking spray.

2. In a small bowl, combine onion powder, garlic powder, oregano, basil, thyme, black pepper, white pepper, cayenne pepper, paprika and salt. Set aside.

3. Cut the chicken sausage into 1-inch pieces, cut potatoes into small cubes, cut red onion into small wedges, cut the carrots into 1/2 inch pieces, chop the green pepper and slice the baby peppers into small rings.

4. Add the olive oil and the Cajun seasoning and stir until everything is coated nicely.

5. Transfer to baking sheet and roast around 30 minutes stirring occasionally.

ingredients:

  • 1 package fully cooked andouille chicken sausage links( 12 ounces)
  • 1 pound red potatoes, cubed
  • 1 red onion, chopped 
  • 1 green bell pepper, chopped
  • 1/2 pound carrots, cut 
  • 1/2 pound baby sweet peppers, cut 
  • 3 tablespoon olive oil
  • 2-3 tablespoons Cajun seasoning
Cajun Seasoning
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon cayenne pepper
  • 3/4 teaspoon paprika
  • 1/2 teaspoon salt
