1. Preheat oven to 350 degrees.  Line an 8x8 baking dish with parchment paper and set aside.

2. In a large bowl stir together the flour, oats, sugars, ginger, and salt.

3. Add the melted butter and vanilla.

4. Mix with a fork or a pastry cutter into a crumble-like mixture.

5. Set aside 1 cup of the crumble mixture for the topping.

6. Press remaining crumble into the bottom of your baking dish with an extra piece of parchment paper. Press down hard with fingertips until it is one solid even layer. You can also use a small flat dish to press.

7. Bake for 10 minutes.

8. In a medium bowl, add the strawberries, lemon juice, sugar, and cornstarch.  Stir together.

9. Remove pan from oven and spread the strawberry filling over the top of the bottom layer.

10. Add remaining crumble to the top and spread evenly.  Some of the strawberries should show through.

11. Bake for another 30-35 minutes until crumb topping is lightly golden.

12. Remove from oven and let cool in the pan on a wire rack.

13. Place in refrigerator for 30 minutes before cutting into squares.   Store in refrigerator.
