Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1 cup sugar
  • 2 eggs, room temp
  • 1/2 teaspoon vanilla extract

You can speed the chilling process by sticking cookie dough in the freezer for one hour instead of 3 hours in the fridge.

1. In a medium bowl combine flour, baking powder and salt. Set aside.

2. In a large bowl or the bowl of a stand mixer, beat butter until smooth and creamy.

3. Add sugar and mix together until incorporated.

4. Add the eggs and the vanilla and mix thoroughly until all clumps are smooth.

5. Add half of the flour mixture and mix together.

6. Then add the other half and mix together until all the flour is incorporated and the dough is thick and sticky.

7. Cover, and chill dough for 3 hours in the refrigerator.

8. Preheat oven to 400 degrees and line a baking sheet with parchment paper or a silicone baking mat.

9. Roll out dough on floured silicone mat or floured surface 1/4 inch thick.

10. Cut into shapes with cookie cutter and place on baking sheets.

11. Bake for 6-8 minutes until edges of cookies are just golden brown.

12. Allow cookies to cool completely on wire rack before decorating.
