Sunsweet Morning Muffins
Nutritious and delicious morning muffins starring Sunsweet’s Amaz!n Prunes and Prune Juice!
Directions
1. Preheat oven to 400 degrees and line a 12-count muffin tin with paper liners.
2. In a medium bowl, whisk together the flour, cinnamon, ginger, baking soda and salt. Set aside.
3. In a large bowl add the coconut oil, prune puree, applesauce, brown sugar, honey, and prune juice. Whisk together until incorporated.
4. Add the eggs and vanilla. Whisk together until well combined.
5. Add the flour mixture to the wet ingredients and stir together with a wooden spoon or spatula.
6. Add the carrots and apple. Stir until just combined.
7. Fold in the coconut, pecans, and prune pieces.
8. Fill the muffin cups 3/4 full. Using a 1/4 cup measuring cup works well for this.
9. Bake for 10 minutes at 400 degrees, then lower heat to 350 degrees and bake for an additional 10 minutes.
10. Remove from oven and let cool on a wire rack.
