Directions

1. Melt butter in a large skillet with a lid over medium heat.

2. Add orzo and cook, stirring constantly, for 3-4 minutes until golden brown.

3. Transfer to a plate and set aside.

4. Add olive oil to the skillet and heat over medium.

5. Add the onion, carrots, and bell pepper.

6. Sauté for 5-6 minutes until veggies are tender.

7. Add garlic and cook for another minute until fragrant.

8. Add the broth, toasted orzo, salt, and pepper to the skillet. Stir together.

9. Bring to a boil, then cover and let cook for 5-6 minutes until orzo is tender.

10. Reduce heat to medium low and stir in the peas, parsley, sour cream, and chicken.

11. Cook for 3-4 more minutes stirring occasionally.

12. Serve warm and top with Parmesan cheese if desired.
