Stained Glass cookies

Directions

1. Follow recipe to make sugar cookie dough. Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper. Roll out dough on floured silicone mat or floured surface 1/4 inch thick.

2. Use a large or medium shaped cookie cutter and a small cookie cutter of the same shape to make a design in the middle of the cookie.

3. Place cookies on baking sheet and bake 5 minutes in preheated oven.

4. Fill center of cookies with crushed candies being careful not to spill candies onto cookie.

5. Place cookies back into the oven for 5 minutes more. Remove and let cool completely.

6. Decorate cookies with royal icing and sprinkles if desired.

ingredients:

For the Sugar Cookies:
  • 3/4 cup butter, softened 
  • 1 cups white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 2 1/2 cups all-purpose flour 
  • 1/4 teaspoon baking powder 
  • 1/2 teaspoon salt
  • 20 jolly ranchers or similar hard candy, crushed
  • Royal icing and sprinkles for decorating *optional

instructions:

  1. Cream butter over medium speed with in your stand mixer.
  2. Slowly add the sugar until fully incorporated.
  3. Beat in eggs and vanilla on slow speed until mixed.
  4. Stir in the flour, baking powder, and salt and add to mixture one spoonful at a time.
  5. Cover, and chill dough for at least three hours (or overnight).
  6. Preheat oven to 350 degrees F.
  7. Roll out dough on floured silicone mat or floured surface 1/4 inch thick.
